Corsica Wine Bar Brings Coastal Mediterranean Flair to the 27th Annual Beaujolais & Beyond Culinary Competition

Denver, CO (11/03/25) — The French American Chamber of Commerce – Rocky Mountain Chapter (RMFACC) is excited to announce that Corsica Wine Bar, one of Denver’s most distinctive new culinary destinations, will compete in this year’s Culinary Competition at the 27th Annual Beaujolais & Beyond, taking place on Thursday, November 20, 2025, at ReelWorks Denver.


Located in Denver’s vibrant RiNo neighborhood, Corsica Wine Bar draws inspiration from the island of Corsica and the Mediterranean coastlines of France and Italy. The restaurant evokes a timeless apéro spirit—warm, rustic, and effortlessly elegant.


At Beaujolais & Beyond 2025, Chef Devin Rachles will present a beef tartare with beef tallow aioli on a house-made sourdough cracker, finished with local microgreens — a dish designed to transport guests, even for a moment, to France.

Led by Chefs Emilio Garcia and Devin Rachles, Corsica’s menu celebrates the intersection of Ligurian and Provençal traditions through seasonal small plates, open-flame robata cooking, and inventive interpretations of coastal and mountain fare.


The beverage program, curated by Emily Nevin-Giannini and Gretchen Thomas—the award-winning team behind Barcelona Wine Bar’s national program—features an expansive collection of European wines crafted by farmers rather than factories. With more than 30 wines by the glass and 200 bottles (three-quarters priced under $75), Corsica’s selection celebrates authenticity and accessibility. Their cocktail program, rooted in Mediterranean amaro and aperitivo culture, pairs perfectly with the restaurant’s ingredient-driven menu.
